I have always liked Redsn0w and has some different options and I never had any issues with it and used it loads of times
but while waiting for Redsn0w to update for an untethered 5.1.1 jailbreak can across Absinthe and decided to try it and have to say it was very easy to use and quick and so far no issues with my 5.1.1 jailbreak.
I know that does not really answer your question but just thought I would share my experiences with both and at the moment I like Absinthe for 5.1.1 only because I used it and it worked great but have to say not tried Redsn0w for 5.1.1 and I am sure many other members will have an opinion be interesting to see what is said.

Previous red snows you have to faff about with DFU mode
Absinthe you just plug in your phone and press "Jailbreak"
Simples!

Did mine with Absinthe hence didn't try Redsnow.
My last Jb was with redsnow and let me give you a hint "Do not itunes to launch when you connect your iphone to desktop/laptop" it will fuckup the whole process. Took me couple of hours to figure it out.

Latest redsn0w works great and noes not need phone to be in dfu mode...... Just connect phone and click the jailbreak button
I've used Absinthe but prefer Redsn0w as it has other features as well

Never tried Redsnow, but Absinthe is a one button solution. I used it to JB 5.0 and 5.1.1. It works great. You can't go wrong.

Practically its the same thing bro.
But with redsnow for older devices which can use limerain exploit (A4 chips and older )it better to put it into DFU mode and JB if you have a lot of apps so they don't get messed up.
Till 5.1.1 came out i was using redsnow and for 5.1.1. absinthe, both of them work great.
Its really up to you, the effect is the same.

i've been reading about this issue, people with 4s are having battery problem on absinthe. anyone here with 4s that did jailbreak using absinthe? Can you confirm if that is an issue? Cause my 4s is coming tomorrow and I wanna know which one is better.(redsnow,absinthe)

My battery has been awesome on my 4s and I jailbroke with absinthe. But when I first jailbroke I didn't restore my phone and start fresh and my battery was dying pretty quick, but then I did a fresh restore and didnt restore any backups and before installing anything, I jailbroke with absinthe and my battery has been great. When I first jailbroke I had pretty much a full phone and it took quite a bit for the jailbreak to happen but after the fresh restore it jailbroke in like 2 mins. It's suggested to jailbreak from a clean restored device and it pretty much guarantees no problems. Right now my 4s's usage is 20hrs 50mins of standby and 2hrs 35mins of usage and my battery is at 75%. That's pretty awesome in my opinion.

That might be the problem. Just need clean restore. In my case, my 4s is fresh from AT&T. I'll just activate it then jailbreak right away.

I usually vote for whichever one puts out the first stable untethered jailbreak for a firmware, in this case Absinthe 2.0. It was my first time using Absinthe (albeit I've used GreenPois0n before), and it is the simplest thing in the world (jailbreak-wise, anyways). It was just a click of a button, where as RedSn0w can be a hassle at times, even if it is just DFU Mode.

for some reason redsnow would not create an ipsw on my machine, says some thing to file being too large? so i just use redsnow+itenes then abstinth.

Absinthe is noob proof just click one button and your done.. Iphone 4s running Absinthe tried all version haven't had a battery problems.
