unlocking your phone will not change anything about your data plan or any other part of your agreed upon monthly rates and services.
the whole reason for getting your phone unlocked is so you can leave at&t and go with a company that has cheaper monthly rates with comparable services.
once you have at&t or whoever unlock your phone for you, you either need to restore your phone through itunes and you will get a display saying "congratulations your phone is now unlocked" or you can deactivate your device with redsnow then reactivate it to get the unlock to take.
if you dont have a different sim to actually test if its working or not there are websites that can check the status of your phones carrier lock/unlock situation.
most however are not free.

if your phone was purchased from a legit carrier and you have a good record with at&t they will unlock it for you for free.
