You can SSH into your device, go to "/var/mobile/Library/", go to the appropriate folders and transfer the .db/.sqlitedb files to your computer. However, if you've already downgraded and your iTunes restore from backup didn't work for whatever reason, chances are you can't do the following, since none of these files will have your original shit on it that you wanted to backup.
For example, if you wanted to backup your txt's, you would go to /var/mobile/Library/SMS/ and backup the sms.db file and also the Parts/Drafts folders (these folders are where your pictures that you sent/received in a txt are saved). If you wanted to backup your notes, you would go to /var/mobile/Library/Notes/ and backup the notes.db file.
Make sure you write down the permissions for any files/folders you backup, so when you transfer them back you can set them back to their original permissions so they work properly.
