I know, that's what I've been usually doing, but some icons aren't changed by the theme creator and you have to create their folders in the bundle folder and that's what I'm not able to do. some apps have the folder name "com.eg.eg" while cydia is I think com.saurik.cydia so they change depending on the app.
and I can't seem to find the name i should put for the app I want

Yes themeing can be a job. As some Icons on the springboard are located in defferent folders. The small battery on the top bar is in the UImages Folder. The Big battery when you plug it in is in the Bundles/com.apple.springboard folder. And if you want to theme an app it really gets crazy as it can be hit or miss depending on the iphone model and IOS that you are running. The iPhone 4 with it's retina display and IOS 4.2.1 is a big switch on the themes. A lot of the icons have to be resized, and that can break down the quality of the image.

I recently found that not all the themes have the folder "Icons" to put the icon pics in them, they have the bundles folder that you can change and of course the UImages that you can change as well. All I'm trying to do is change an icon for an app that the theme creator didn't change, and I can't seem to pull it off lol
